The Lecture Room & Library celebrates the beginning of a new culinary year by announcing its
collaboration with the finest English Natural Spring Water, Crag Spring. Making a conscious effort to
significantly reduce sketch’s carbon footprint and support local economies, sketch Wine Director, Fred
Brugues, welcomes Crag Spring Water to the menu. The logistics of the partnership will be delivered
by water suppliers Aqua Amore.

sourced from an unspoiled and remote part of the peak District where I was delighted to visit following its
discovery in November 2022. The still tastes pure, natural, and creamy and free of impurities – the sparkling is
hand carbonised to create a gentle frizzante.
Twenty per cent of sketch’s annual wine purchases are from British producers therefore the introduction of Crag
Spring is a natural progression in our quest to buy British. As well as having a delicious taste, Crag Water
enhances our integrity as a conscious buyer of local and artisanal goods, and the bottles are reused and not just
recycled.”

The never-ending cycle of sustainability begins and ends with Aqua Amore, an expert water delivery
service based in London. Once the water is enjoyed and consumed, the bottle will be returned to its
source; where each bottle is delicately hand washed with Crag Spring water and refilled. The bottle’s
life continues by returning to the Lecture Room & Library to be served to the guests once again. Every bottle reused is a move in the right direction toward reducing our Carbon footprint by eliminating the
energy intensive recycling process.

The combination between Aqua Amore’s delivery and return capability, sketch’s commitment to make
a difference for the planet, and the highly progressive Crag Spring Water company, has successfully
implemented a sustainable model of consumption in a mainstream London restaurant. This will
undoubtedly inspire and change the future of bottle usage in the hospitality sector. Christopher
Tanousis, who founded Aqua Amore with his brother Michael, believes this new model for bottled
water sales will grow exponentially, specifically in city centres across England. He also believes that
the everyday consumers currently taking deliveries from Aqua Amore to their homes on a weekly basis
will also take advantage of this chance to consciously improve on their own environmental
responsibility.

about SKETCH
sketch’s home, 9 Conduit Street, is a Grade II* listed building that was designed by James Wyatt in
1779 and has previously been the headquarters of the Royal Institute of British Architects, before later
becoming the London Atelier of Christian Dior. sketch was inaugurated in 2002 by restaurateur,
Mourad Mazouz, and three-Michelin-starred MasterChef, Pierre Gagnaire.
As a destination for food, art, and music the Mayfair venue continues to contribute to the building’s
heritage as a destination for experimentation. sketch consists of the three Michelin Starred Lecture
Room and Library, the Parlour, a whimsical all-day cafe and bar at night, and the Gallery, a vibrant
gastro brasserie. sketch also encompasses the Glade, serving a lunch garden menu and cocktails at
night, and the East Bar, a small intimate bar for London.

The Lecture Room & Library was awarded its first Michelin Star in 2005, a second star in 2012 and in
2019 the restaurant was awarded its third star. The restaurant was awarded five AA Rosettes in 2008
and has retained this accolade since. The wine list is consistently recognised in the World of Fine
Wine, The World’s Best Wine List and The Wine Spectator. The restaurant has won Design Restaurant
of the Year, Restaurateur’s Restaurant of the Year and Modern European Restaurant of the Year by
Tatler Magazine, as well as Best Restaurant by GQ Magazine.
